Super simple 2 ingredient banana pancakes!#Blogtober2017

This year I thought it would be super exciting to take part in #Blogtober2017 if you don’t know what that is, then hop along to Hexmum’s blog (Mandi) and you can take a looksie. I have also decided that I’m going to go all Stealth mode with these posts, as i don’t want to spam my homepage with blogtober, but don’t worry I’m still taking part! – You can also click on my blogtober image in the sidebar.

Day 11 of Blogtober is all about the Kitchen! i really struggled with what to do for this one, so i’m sorry but i’m posting this recipe that i published a while back, and it’s Logan’s favourite banana pancakes! And the best thing is they only require 2 ingredients.

This morning I thought I would make Logan his favorite banana pancakes and while I’m at it I may as well share with you what I do to make them so yummy scrummy and finger licking 😉 If you make these for your little ones, please do tag us on Instagram, I’d love to see your efforts.

The first step in making your banana pancakes is to get your 2 ingredients those are 1 egg and 1 ripe banana, which you need to mash into a bowl using a fork, or if you wish an electric whisk/blender, then just crack open the egg and mix until some sort of batter emerges. (At this stage if you want to add some fruit like blueberries, mashed strawberry or anything you like really, you can do so here)


STEP 1 – mash the banana


STEP 2 – add the egg


STEP 3 –  whisk egg and banana

The next thing you need to do is heat up some oil or butter into a pan, i personally use this flora low calorie fry light oil which does the trick, and all that’s left to do is spoon the mixture into the frying pan into any size pancakes you wish.


STEP 4 – cook on both sides until golden

Finally turn them over until they are lovely and golden on both sides, and that’s all there is to it, you have delicious banana pancakes for your baby to enjoy, just be sure there cooled right down but you can freeze these and defrost as and when you want to give them and just pop them in the microwave to warm them up.

    Yummy! Banana pancakes are a fave in this house. I’ve started adding extra bits into the batter now to bulk them up a bit. My latest idea was to add oats and flaxseed. Flaxseed is great for Omega 3! Perfect because he doesn’t really eat meat or fish yet.
