BLW – Yummy Banana Muffins *Recipe*

Bananas – one of the most common fruits in this house at the moment, one because they’re great finger foods for Logan and they’re a great versatile ingredient, and it’s not just Logan who loves bananas. I took the base recipe from Annabel Karmel and you can check everything else she makes here.

What you will need:

1 medium egg
1/2 tsp vanilla extract
55 g soft light brown sugar
1 large, very ripe banana, well mashed
55 ml sunflower oil
85 g wholemeal flour
1/2 tsp baking powder
1/2 tsp bicarbonate of soda
1/4 tsp ground cinnamon

Step 1 – Beat together the Eggs, Sugar, Oil and mashed up banana into a bowl
Step 2 – Sift on the flour, cinnamon, baking powder, bicarbonate of soda, and vanilla extract and mix

Step 3 – Spoon into muffin cases and pop into the oven for 12-14 minutes until the tops are spongy and golden

And there you have it, simple but delicious banana muffins, an ideal snack for when your out and about or as a desert for mealtimes, however, these are not suitable for freezing so sadly can’t batch make them – but will last for about 3/4 days in an airtight Tupperware box. – hope you enjoyed this recipe- they definitely went down a treat with Logan.
